OK, here is the recipe for that amazing and EASY cornbread. I made a grocery list today and managed to leave the store with all of the items on it. Phew! I did get in the express lane today with about $150 worth of groceries and didn't realize it until the cashier was asking for my Kroger card. Too late to move after loading alllll those groceries on the belt. The guy behind me was not happy and I can't say that I blame him! Oh well, honest mistake.
My mama opened this door for me, by way of a friend of hers.
1 box Jiffy cornbread mix
8 oz creamed corn
8 oz whole kernel corn
1 cup sour cream
3 T butter, melted
Mix all together. I actually used 3 eggs because these are REAL eggs from my best friend Linsey's beautiful chickens! They are a little smaller than store bought eggs. I have gotten hooked. You can really notice the difference. I wonder if I could figure out a chicken coop in my backyard in Brookhaven?
Pour in a greased pan. Bake at 350 degrees for 35 minutes.
Or 40 minutes if you get lost in another task...oops. It should be just fine!
I've made this with all creamed corn too - it doesn't really matter...use whatever you have in your pantry, or whatever you remember to get at the grocery store!
