Bananas Foster

One of my all-time favorite desserts! Partly because it is delicious and partly because it reminds me of being a child. I have so many memories of my mom making this at dinner parties...she made serving dessert a show, presenting the dish aflame with Bacardi 151. I didn't flambe it for Josh and I...a little fancy for a Monday night at home!

You'll need:
3 T butter
3/4 cup brown sugar
3/4 t cinnamon
4 bananas
1 oz rum
vanilla ice cream

Combine the butter, brown sugar and cinnamon. Cook over low heat for a few minutes. (I halved the recipe since there were only 2 of us.)

It should start to look like this. Your kitchen will smell fabulous!

Now add the bananas like so...

Cook them for several minutes until the bananas get a bit soft and the butter mixture begins to bubble. Add the rum. You'll want to eat out of the pan right about now.

Throw a few scoops of vanilla ice cream in a bowl and pile the bananas on top. Make sure to get plenty of that butter mixture in there. It is so good that it kind of burns your throat. Eat immediately!!

Your bowl will look like this in no time.

Go on, lick the bowl. We did!

so -- for the french toast version --

basically the same recipe for the sauce but i add nutmeg -slice the bananas up on an angle...- no rum -(it is a breakfast food!!) - then you make your french toast like you would make regular french toast..-- with egg, vanilla extract and milk --soaked bread -- then pour the banana mixture over the top -- and eat up!
