Amazing App + New Blog Design

Got to whip up a little appetizer this afternoon for the Labor Day weekend brother-in-law reminded me about this appetizer, and boy am I glad he did! It's killer.

For the three bean salsa, you'll need:

  • 2 cans shoepeg corn
  • 1 can blackeyed peas
  • 1 can black beans
  • 1 small jar diced pimentos
  • 1 small red onion, chopped
  • 1 cup celery, chopped
  • 1 cup green pepper, chopped
Drain and rinse all the veggies. Pour veggies into a bowl and set aside.

For the dressing, you'll need:
  • 1/4 cup apple cidar vinegar
  • 1/2 cup sugar
  • 1/2 cup canola oil
  • 1 T water
  • 1 t salt
  • 1/2 t pepper
Combine the dressing ingredients on the stovetop and boil. Pour on top of the veggies and stir. Serve with tortilla chips and tell me you can stop dipping!!
