Perfect Pumpkin Muffins

Get ready...if you like pumpkin, this recipe is about to be your go-to! We eat these year-round in our house, but they just taste better when it's officially fall.

You'll need:

  • 1 cup canned pumpkin
  • 1 cup chocolate chips
  • 1 and 2/3 cups flour
  • 1 cup sugar
  • 1 Tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 stick butter, melted
Mix all of the ingredients together...


Easy, huh?

Side note: Why in the world do they make standard baking cups that don't fit standard muffin tins? Does anyone else have this problem??

Anyway, place generous helpings of batter in a muffin tin of 12 (below). Use paper baking cups or spray with Pam. 

Bake for 20-25 minutes at 350 degrees. You'll eat these in 2's, I promise.

Also very good with pecans on the top.
