It's been a long time since I've done any baking. Since it's been sort of overly hot for the season, I thought a key lime pie would be delicious. This turned out to be a great recipe!
For the crust, you'll need:
- 18 whole graham crackers (all 4 pieces)
- 1/3 cup sugar
- 1/3 cup melted butter
For the filling, you'll need:
- 1 Tablespoon lime zest (more if you want a stronger lime flavor)
- 1/2 cup lime juice (freshly squeezed)
- 2 egg yolks
- 1 can (14 oz) sweetened condensed milk
First, preheat the oven to 350 degrees. You'll make your crust first. Yum, graham crackers remind me of s'mores...
Crush crackers in a food processor. If you don't have a food processor, put the graham crackers in a Ziploc bag and start hammering away.
They should be nice and fine, like this...
Next, pour the crumbs into a bowl. Add the sugar and melted butter.
Press the mixture into a pie pan. You'll bake this for about 5 minutes. Once finished, just put it to the side while you prep the filling.
Now for the filling. I am really funny about zest. I HATE the texture. It is just icky to me. But, it is necessary to give that lime flavor and in all honesty, I really didn't get hung up on the flakes while eating the finished product. You'll need a zester, like below...
Mix the lime zest, lime juice (I used 2 or 3 limes to get the 1/2 cup) and egg yolks (no whites!).
Add in the condensed milk...
And mix on high until smooth. It will be pretty thick.
Pour the mixture on top of the baked pie crust. You'll bake this for 15 minutes.
Let it cool once finished and then refrigerate it for a couple of hours. I served this with a dollop of whipped cream. To make your own whipped cream, just throw some heavy whipping cream in the mixer and add some sugar...I added 2 tablespoons of sugar for 1 cup of heavy whipping cream. Add some vanilla too if you'd like. Let it mix on high until it's firm.
