Here's what we ate for dinner tonight. My mom's meatloaf, fresh lady peas and garlic cheese bread. YUM. This meatloaf is so juicy, you wouldn't believe it!
For the meatloaf, you'll need:
- 1.5 lbs ground beef (chuck)
- 1 cup bread crumbs
- 1 package Knorr onion soup/dip mix
- 1 egg, beaten
- 1.5 teaspoons salt
- 1/4 teaspoon pepper
- 1 medium can diced tomatoes
- 3 Tablespoons vinegar
- 3 Tablespoons brown sugar
- 3 Tablespoons Worcestershire sauce
Combine the first 6 ingredients in a large bowl. Add 1/3 can of the tomatoes and mix again. It's easiest to just mix with your hands. Shape into a loaf and place in a 10x6x2 pan. In a small bowl, combine the remaining tomatoes and the rest of the ingredients. Pour over the loaf and bake for 1 hour 15 minutes at 350 degrees. Slice and serve!
I got the lady peas at our local farmer's market. I just simmered them with Better Than Buillion for about 45 minutes. They are so delicious. The garlic cheese bread was also super easy. Just take a slice or two of regular bread, spread some butter on it, sprinkle on some garlic powder and add whatever cheese you have. Broil for a few minutes. Keep a close eye.
